Tasty Tomatoes

Celebrate this yummy fruit during ‘Tomato Fortnight’ 22nd May - 5th June!


What better way to enjoy the humble but oh-so-tasty tomato this month than by having a go at (what is in our opinion) one of the tastiest and healthful breakfasts on the planet!…Shakshouka!


Shakshouka is a popular dish that is believed to have originated in either Yemen or Tunisia. The name "Shakshouka" means "all mixed up," which accurately describes the dish. It consists of eggs cooked in a flavourful tomato sauce with peppers, onions, and spices. Sometimes, additional ingredients like herbs or cheese are added to enhance the flavour.


This dish is typically prepared by sautéing onions, green peppers, garlic, and spices in olive oil until softened. Then, tomatoes and tomato sauce are added to create a rich and aromatic sauce. The eggs are cracked directly into the sauce and cooked until the whites are set but the yolks remain runny. The dish is often served in the same pan it was cooked in, along with some bread for dipping. Truly delicious!


Shakshouka

Serves 4-6

Ingredients:

3 tbsp extra-virgin olive oil

1 large onion, halved and thinly sliced

1 large red pepper, seeded and thinly sliced

3 garlic cloves, thinly sliced

1 tsp ground cumin

1 tsp sweet paprika

⅛ tsp ground cayenne, or to taste

400g tin of chopped tomatoes

¾ tsp coarse sea salt, plus more as needed

¼ tsp black pepper, plus more as needed

150g feta, crumbled4 to

8 eggs (one or two per person)

Chopped coriander, for serving

Sriracha sauce, optional for serving

Sour dough loaf


Method:

Heat oven to 190c. Heat oil in a large frying pan that has an oven-proof handle over medium-low heat. Add onion and pepper. Cook gently until very soft, about 20 minutes. 


Add garlic and cook until tender, 1 to 2 minutes; stir in cumin, paprika and cayenne, and cook 1 minute. Pour in tomatoes and season with ¾ teaspoon salt and ¼ teaspoon pepper; simmer until tomatoes have thickened, about 10 minutes.


 Taste and add more salt and pepper if needed. Stir in crumbled feta.


Using the back of a spoon create a dent in the tomato for each egg you will be using. Gently crack the eggs into frying pan into these dents. Season eggs with salt and pepper. 


Transfer frying pan to oven and bake until eggs are just set, 7 to 10 minutes. Sprinkle with coriander and serve with hot sauce and slices of crusty sour dough bread for dipping.
